My Favorite Breakfast: Fried Eggs Over Rice

In my very first post on this blog, I mentioned that I usually make extra rice for dinner so that I can top a fried egg over some rice for breakfast the next day. With leftover white rice, I will also drizzle a little soy sauce on top of the egg.

OMG. I thought my family members were the only ones who loved this. It's a favorite comfort food, reminds me of childhood Sunday mornings when my Hawaiian-Asian dad would cook breakfast for us.

Although being a fusion family some of us put ketchup on our eggs like our mom, instead of the soy sauce.

I'm guessing that this is primarily an Asian (my background) thing to do. I told my caucasian coworker about this, and she had this sort of gross-out look on her face.

I do like ketchup on my scrambled eggs.

Ah, then maybe you'll be up for the Hawaiian blue plate breakfast -- egg over easy on a scoop of rice, two slices of fried liguica sausage and a banana? Yum. Although that's a lot of breakfast if you're not a big strapping hapa boy.

I would have been all over that kind of breakfast in my pre-vegetarian life, except, perhaps, the banana part.

I love fried eggs and rice, I had that in South America. I like it with fried plantains on the side.
